Breakfast or Dessert Cake

This apple cream cheese cake is perfect. We could end our paragraph there, but we will go on to tell you how absolutely decadent it is. This cake exudes the essence of fall as the apples and vanilla batter fill the air with the sweetest aroma as it bakes. Serve this at brunch, breakfast or even dessert with ice cream and caramel. Whoever you bake this for is certainly in for a treat!

Ingredients

  • 1 Box organic classic yellow cake mix, we use Annie’s
  • 4-6 apples, cored and sliced thin
  • 1/2 cup good apple cider
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 8 ounces cream cheese
  • 2 tablespoons butter
  • 1 tablespoon 1/2 and 1/2
  • 2 tablespoons sour cream
  • 2 tablespoons oil
  • 1 egg
  • 2 tablespoons honey

Preparation

Preheat oven to 350 degrees.

Core and slice your apples thin, you can leave the skin on if you desire. Spray an 8″ cake pan and line with parchment paper, or you can use loaf pans. If you choose to use loaf pans, you can make two loaves.

Beat together the cream cheese, butter, vanilla, cinnamon, half and half and sour cream.

In separate bowl, beat together the cake mix, apple cider, egg and oil.

Layer the apple slices into the prepared cake or loaf pans. Spoon over the cream cheese mixture, it may be a bit thick, just try to spread it out the best you can over the apples.

Pour the cake batter on top. You can add some apple slices on top or even half an apple and place it on top of the cake. Put the cake in the oven for about 35-40 minutes or until the center is not jiggly. If you are using loaf pans the time will be slightly shorter, check after 25 minutes.

When the cake is done, brush the top with your honey. This will create a sweet glaze and shiny top.

Serve this apple cream cheese cake warm! Top with good vanilla ice cream and caramel if you are serving it as a dessert.
